There's a long webpage about research on memory and chess, which generally concludes that chess memory is a highly specialized skill, only incidentally related to general memorization.
That's how a world class musician is able to play a 30 minute long piece with thousands of notes purely from memory. Someone with a good ear for music can remember thousands of melodies and songs because music is also a sequence of logic. When the position is logical he has no problem remembering it, but when the position makes no sense then he can't do it. A GM is shown different positions for 5 seconds and asked to reconstruct them, some of them are from actual games and some of them just have pieces placed randomly placed. This is a video that kind of shows what I'm talking about. Because chess is a sequence of logical events, they can probably fill in the gaps and reconstruct the entire game by just remembering the main events. I can imagine that a GM thinks about a game that they played in terms of ‘I played that opening, my opponent played this popular line against it, they played this break, I was able to close the position and maneuver the pieces to the kingside and eventually break through and trade into a winning endgame‘. Chess at the highest level is very logical to the players and most of the moves are obvious to both sides, so they only have to remember the key moves that were not obvious. You have to realize that memorizing a chess game is not the same as memorizing something random like names or facts or a string of numbers. I don't know if the ability to recall entire games is necessarily dependent on an extraordinary memory, although of course the ability to remember thousands of games is.
